2 Dayka & Hackett Mangos
2 tbsp chopped cilantro
1 oz lime juice
1 tsp ginger
¼ tsp chili powder
1 tsp cumin
8 oz cream cheese, softened
Salt and pepper, to taste
Toasted sourdough bread, sliced
Baby arugula, lightly chopped
Red pepper flakes
Olive oil
1. Start by cutting the avocados in half and removing the seeds. Using a sharp knife, cut the flesh of the avocado into small squares, then place into a medium-sized bowl. Add the chopped cilantro, lime juice, ginger, chili powder, cumin, salt, and pepper into the bowl. Using a spatula, fold in all the ingredients until fully combined, being careful not to smash the avocado pieces. Set to the side until ready to use.
2. Next, add 8 oz of softened cream cheese, ¼ cup of chopped mango, and salt to a small bowl and fold together.
3. To build the Mango Avocado Toast, toast the bread until lightly golden. Once toasted, spread the cream cheese mixture over the bread, then top with the avocado. Cut the mango into thin slices and layer them over the cream cheese and avocado. Top with the baby arugula.
4. To finish, sprinkle with red pepper flakes and drizzle with olive oil to taste. Enjoy!
