1 tsp lemon juice
2 tbsp sugar
1 cup mascarpone, softened
½ cup powdered sugar
1½ cups heavy whipping cream
1 tsp vanilla extract
1 baguette, sliced and lightly toasted

1Place diced peaches in a bowl and toss with lemon juice. Add sugar and toss until peaches are well coated. Set aside.
2Place mascarpone into a large bowl. Using an electric mixer, beat briefly to soften.
3Add the powdered sugar and mix well.
4Add in the heavy whipping cream and vanilla extract and mix until combined. Store in refrigerator until ready to use.
5Spread mascarpone on each crostini and top with peaches. Drizzle with honey and sprinkle with freshly chopped mint, if desired. Enjoy!
