Bobalu Strawberries ?!

‐ Strawberry Piña Colada Popsicles ‐

1 cup Bobalu Strawberries, diced

1 cup pineapple (fresh or frozen), diced

¼ cup pineapple juice

3 tbsp honey

⅔ cup coconut milk

⅓ cup Malibu rum 


Prep Time: 15 mins

Freeze Time: 12–24 hrs

Servings: 6

1 Combine pineapple, strawberries, and pineapple juice in a blender.

2 Pulse until coarsely blended.

3 Whisk together coconut milk, honey, and rum and set aside.

4 Portion blended fruit into popsicle molds, filling them about ⅓ of the way.

5 Pour coconut-rum blend into molds and freeze popsicles for 30 minutes, then insert popsicle sticks.

6 Continue to freeze for 12–24 hours.
