2 SUNSET® Campari® Tomatoes, chopped, divided
2 avocados, ripe
¼ tsp garlic, minced
1 tbsp shallots, finely diced
½ tbsp Jalapeño pepper, finely diced (remove seeds for less heat)
3 tbsp green onions, sliced
1 ½ tbsp lime juice
1 tbsp fresh cilantro, chopped
1 tbsp fresh cilantro stems, chopped
Freshly ground black peppercorns to taste
Kosher salt to taste

1. Slice the avocados in half, remove the pit, and add to a bowl.
2. Add ½ of the chopped SUNSET® Campari® Tomatoes, garlic, shallots, and Jalapeño pepper. Mash together to your preferred consistency.
3. Fold together the remaining ingredients and season with salt and pepper to taste. Serve fresh with your favorite tortilla chips. Enjoy!
