2 ripe Del Rey Avocados seeded, and halved
½ cup grape or cherry tomatoes, halved
4 oz (120 g) baby mozzarella balls (Bocconcini)
2 tbsp basil pesto
1 tsp minced garlic
¼ cup olive oil
2 tbsp balsamic glaze reduction, to drizzle
2 tbsp fresh basil, chopped
Salt and pepper to season
Fresh basil leaves to serve (optional)

Servings: 4 halves
1 Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt, and pepper in a bowl to make filling. Toss well to evenly combine all of the flavors.
2 Arrange prepared avocado halves onto a plate with fresh basil leaves.
3 Spoon the Caprese filling into each avocado half and drizzle with balsamic glaze.
4 Top with chopped fresh basil. Serve immediately and enjoy!
