Marinade

1 cup water

1 cup apple cider vinegar

2 tbsp brown sugar

2 tsp fresh rosemary, chopped

½ tsp kosher salt

¼ tsp black pepper

1 pinch red pepper flakes, optional

Roasting

4 tbsp butter, cut into 8 slices

1 tsp fresh rosemary

Prep Time: 15 mins

Marinade Time: Overnight

1 In a small bowl, mix the marinade ingredients. Pour into a baking dish large enough to hold all eight onion halves (a 9" × 13" baking dish is recommended).

2 Trim the tops and roots from each onion, then cut in half horizontally, leaving the skin on. Place the onions cut side down in the marinade. Cover and refrigerate overnight.

3 Preheat the oven to 400° F. Flip the onions over in the marinade.

4 Top each onion half with ½ tbsp of butter and sprinkle with the remaining rosemary.

5 Roast uncovered for 1 hour, or until golden brown and tender.

6 Remove from the oven, spoon the sauce over the onions, and sprinkle with fresh herbs, if desired.

7 Remove the outer skins from the onions. Enjoy!
