1 Earthbound Farm Organic Lemon Arugula Salad Kit
1 boneless, skinless chicken breast
1 lemon, halved
¾ tbsp black pepper
½ tsp sea salt
½ tsp onion powder
½ tsp garlic powder
¼ tsp thyme
¼ tbsp brown sugar
¼ cup white wine (optional)
½ tbsp olive oil

1 Trim any excess fat from the chicken breast and add to a large bowl. Sprinkle with pepper, thyme, onion power, garlic powder, brown sugar, and sea salt. Juice half of the lemon and add to the bowl. Slice the other half and set aside. Add white wine (optional) and olive oil. Toss to make sure the chicken breast is thoroughly covered. Let marinate for at least 30 minutes.
2 Heat a grill to 400° F. Add the chicken breast and lemon slices to the grill. Close the lid and let cook for 4–5 minutes until charred.
3 After 5 minutes, flip the chicken and cook an additional 4–5 minutes or until the chicken reaches an internal temperature of 165° F. Remove to let cool while the salad is prepared.
4 Add salad kit to a bowl and mix in the diced almonds and shredded Parmesan cheese.
5 Once the chicken has cooled, slice into strips and place on top of the salad bowls, then drizzle with Avocado Oil Lemon Vinaigrette.
6 Top with grilled lemon slices and enjoy!
