2 dry pints Pure Flavor® Cloud 9® Bite-Sized Fruity Tomatoes, quartered
4 boneless, skinless chicken breasts
4 slices mozzarella
2 cloves garlic, minced
4 tbsp extra-virgin olive oil
3 tbsp lemon juice, divided
1 tbsp Parmesan, roughly chopped
1 tsp Italian seasoning
Salt and pepper, to taste

1 In a small bowl, whisk together the oil, half the lemon juice, and Italian seasoning. Add the chicken and coat it evenly with the marinade. For enhanced flavor, let it marinate for 30 minutes.
2 Heat a pan over medium-high heat on the stove top. Remove the chicken from the marinade, discarding any excess, and add it to the pan. Cook for about 5–7 minutes per side, or until the internal temperature reaches 165° F (75° C).
3 In a mixing bowl, combine the tomatoes, garlic, and remaining lemon juice. Set aside.
4 While the chicken is still cooking, top each breast with a slice of mozzarella. Cover the pan with a lid and cook until the cheese is melted.
5 Remove the chicken from heat and plate as desired. Top with the tomato mixture, garnish with Parmesan, and enjoy!
