1 ripe mango, peeled and diced
½ red onion, finely chopped
½ cup fresh cilantro, chopped
2 tbsp lime juice
1 tbsp olive oil

½ cup sour cream (or Greek yogurt for a lighter option)
1–2 tsp chipotle in adobo sauce, to taste
8 small corn tortillas

1 In a bowl, combine the chopped cherries, mango, red onion, cilantro, and lime juice. Toss gently and season with salt and pepper. Set aside to let the flavors meld.
2 In a small bowl, mix the sour cream (or Greek yogurt) with the chipotle in adobo sauce. Taste and adjust the amount of chipotle based on desired level of spiciness.
3 Warm the tortillas on a skillet or grill until soft and pliable. If you’re using protein, heat it and place a portion on each tortilla. Spoon the cherry-mango salsa onto the tortillas, then drizzle with the chipotle crema.
4 Serve the tacos with extra lime wedges on the side and enjoy this sweet, spicy, and smoky fusion dish!
