WTF Do I Do With
Red Sun Farms™ Cherry Tomatoes ?!


‐ Brussels Sprouts with Tomatoes and Peppers ‐

1 cup Red Sun Farms Cherry Tomatoes, quartered

Red Sun Farms Red Pepper, diced medium

Red Sun Farms Yellow Pepper, diced medium

1 cup Brussels sprouts, quartered

Salt and pepper

Drizzle of olive oil

½ chorizo sausage, chopped small

1 tsp balsamic vinegar

½ cup Gruyère cheese

 

Prep Time: 15 min

Cook Time: 30 min

Servings: 2

 


1 Preheat oven to 400° F. Preheat cast iron or oven-safe pan over medium-high heat.

2 Toss quartered Brussels sprouts with olive oil, salt, and pepper and add to hot pan. Allow for pieces to get slightly charred before stirring, about 3 minutes. Toss and repeat. 

3 Add tomatoes, peppers, and chorizo sausage and toss.

4 Add balsamic vinegar and toss.

5 Top with Gruyère cheese and cook in the oven for 20 minutes until desired crispiness. Enjoy!
