WTF Do I Do With
4Earth Farms™ Organic Brussels Sprouts ?!

‐ roasted Brussels and Butternut Squash salad ‐

roasted brussels sprouts

3 cups 4Earth Farms Organic Brussels Sprouts, ends trimmed and halved

3 tbsp olive oil

Salt to taste


roasted butternut squash

1½ lb Butternut squash, peeled, seeded, and cubed (about 4 cups of cubed squash)

2 tbsp olive oil

2 tbsp maple syrup

½ tsp ground cinnamon


2 cups pecan halves

1 cup dried cranberries

Maple syrup to taste


Prep Time: 20 min

Cook Time: 20 min

Servings: 6

1 Preheat oven to 400° F.

2 Toss halved 4Earth Farms Organic Brussels Sprouts in olive oil and salt. Roast in oven for about 20 minutes.

3 Toss cubed Butternut squash in olive oil, maple syrup, and cinnamon. Roast in oven for about 20 minutes.

4 In a large bowl, combine roasted Brussels sprouts, roasted cinnamon Butternut squash, cranberries, and lightly toasted pecans. Add some maple syrup and toss. Enjoy!
