Foxy Strawberries ?!


‐ Grilled Chicken Tacos and Strawberry Salsa ‐

1 cup Foxy Strawberries, diced

¼ cup fresh cilantro, chopped

¼ red onion, diced 

½ lime, juiced

Salt, to taste 

 

Tacos

2 cups Foxy Romaine, shredded 

1 lb boneless, skinless chicken breast

1 tbsp olive oil

8 small flour tortillas

1 avocado, sliced

Salt and pepper, to taste

 

Yogurt-lime dressing

½ cup plain Greek yogurt 

1 lime, juiced

Salt and pepper, to taste 

 

Prep Time: 20 mins

Cook Time: 10 mins

Servings: 4


1. Preheat your grill over medium heat. Rub the chicken with olive oil and season with salt and pepper. Grill for 5–7 minutes per side, or until the internal temperature reaches 165° F. Let rest for 5 minutes, then slice thinly.

2. In a medium bowl, combine the diced strawberries, red onion, cilantro, lime juice, and a pinch of salt. Mix well and set aside.

3. In a small bowl, whisk together the yogurt, lime juice, salt, and pepper. Chill until ready to use.

4. Warm the tortillas in a dry skillet. Layer with shredded Romaine, grilled chicken, strawberry salsa, and avocado. Drizzle with the yogurt-lime dressing and enjoy!
