WTF Do I Do With
Sunset® Minzano® tomatoes? ?!

‐ Handkerchief Minzano® Pasta ‐

1 lb fresh pasta

1⁄4 cup olive oil

4 cloves garlic, thinly sliced

2 cups halved SUNSET® Minzano® tomatoes

1⁄4 cup pine nuts

16 basil leaves, hand torn 1⁄8 tsp Kosher salt

Servings: 4



Heat a large pan to medium heat. Add olive oil and sauté garlic until lightly browned.

2 Add chopped tomatoes and stir for a couple minutes until the tomatoes start to soften. Add pine nuts and salt. Reduce heat to simmer.

3 Bring a large pot of salted water to boil. Once boiling, place fresh pasta ribbons into boiling water and cook for two minutes. Strain and add to sauce.

4 Portion and plate then garnish with torn basil, freshly grated parmesan, and cracked black pepper.
