12 oz Euro Beans®
2 tbsp white wine vinegar
3 tbsp extra virgin olive oil
2 tbsp chopped mint leaves
Salt and pepper, to taste

Servings: 4 cups
1 Wash Euro Beans® thoroughly and cut into 2-3" lengths on an angle.
2 Blanch beans in boiling water for 2 minutes and then quickly put into ice water to stop the cooking and set the bright green color.
3 Drain well and then toss with vinegar, oil, salt and pepper, and mint.
4 Place on a serving plate or bowl. Garnish with remaining mint.
