14 oz (400 g) package refrigerated pie crust
1 cup 35% whipping cream
¼ cup sugar
1 tsp vanilla extract
1 cup mascarpone cheese

1 Cut pie crust into 3½" (8.9 cm) rounds. Arrange rounds 1" (2.5 cm) apart on a rimmed baking sheet and bake in a preheated 400º F (204º C) oven for 8 minutes (until light golden brown). Set aside to cool completely.
2 Whip cream with sugar and vanilla until it begins to form firm peaks. Add mascarpone and whip until combined.
3 Pipe or spoon about 2 tbsp of cream onto pastry rounds and top with strawberries, drizzled caramel, chocolate shavings, and mint.
