4 slices of rye or whole grain bread
1 avocado, sliced
4 slices of mozzarella cheese
1 cup baby spinach, de-stemmed
½ cup feta cheese, crumbled
⅓ cup pesto sauce
1 cup fresh basil leaves, de-stemmed
1 tbsp pine nuts or walnuts
1 large garlic clove
¼ cup extra-virgin olive oil
¼ cup freshly grated Parmesan cheese
1 Combine basil, pine nuts, and garlic in a blender or food processor and blend until very finely minced. With the machine running, slowly add the oil and process until the mixture is smooth.
2 Add the cheese and process very briefly to combine ingredients.
3 Set aside or store in refrigerator until ready for use.
1 On two slices of bread, layer on spinach, mozzarella, avocado slices, pesto sauce, and feta cheese crumbles.
2 Top with another slice of bread and then either grill each side for several minutes or use a panini press until cheese is melted.
3 Serve warm.
