2 Envy apples, peeled, cored and halved
3 cups apple juice
1 tbsp vanilla extract
2 strips lemon peel
For the Caramel
1 cup sugar
6 tbsp butter, diced
½ cup heavy cream
1 tsp kosher salt
½ tsp vanilla extract
Small high-sided pot
1 Add sugar to the pot and melt over medium-high heat, stirring constantly.
2 Once sugar is completely melted, add butter a few cubes at a time, whisking gradually and steadily to incorporate.
3 Slowly stream in heavy cream; whisk carefully as the caramel boils up.
4 Let mixture boil for 1 minute, then turn off heat and stir in salt and vanilla.
5 Pour into a heat proof container, allow to cool slightly.
6 Bring apple juice, lemon zest, and vanilla extract to a simmer.
7 Add apples, lower heat, and slightly simer until tender.
8 Remove apples from liquid and drizzle with warm caramel.
