2 Lemonade™ apples (exclusively marketed by Giumarra), cored and sliced
2 Persian cucumbers
¼ cup loosely-packed fresh basil
2 tbsp extra-virgin olive oil, plus additional to serve
2 tbsp apple cider vinegar
1 lemon, juiced
2 garlic cloves
1 large heirloom tomato, diced
¼ cup toasted pine nuts, plus additional to serve
½ cup water
Salt, to taste
Pepper, to taste
Prep Time: 15 min
Chill Time: 5 min
1 Add all ingredients to a blender. Blend on low until ingredients are broken down.
2 Turn blender speed up to medium for about 1 minute, then to high for an additional minute until mixture is velvety smooth.
3 Taste for seasoning and add more salt and pepper, if needed.
4 Chill until ready to serve, or serve immediately, garnishing with pine nuts, olive oil, and reserved fruit and vegetable slices (if using).
